You might be asking yourself, can’t I just purchase pre-seasoned pork at my local grocer? The answer is yes, you absolutely can, but, if I have learned anything over my years cooking, is doing things from scratch is much more satisfying, especially when you do it well. The other reason you might want to make your own chorizo seasoning is the fact that you may be part of a religion that doesn’t eat pork, or you may simply want to have a healthier meat choice, even though pork is my favorite for chorizo. This will open up other alternatives like extra lean ground turkey or extra lean ground sirloin.
This may not be a 100% traditional chorizo seasoning mixture, but, I guarantee that it will be a hit!
Ingredients
- 4 tbsp paprika
- 2 tsp ground red pepper
- 1/8 tsp cayenne pepper
- 2 tsp sea salt
- 1/2 tsp ground black pepper
- 1 tblsp garlic powder
- 1 tblsp chili powder
- 1 tsp ground coriander
- 1/2 tsp ground cumin
Method
Step 1
Mix all spices and put in an old empty spice container to store it, or use it immediately on your meat.
Additional Tips
I personally like to make 2-3 batches of this spice mixture at a time so that I can just have it ready to use at a seconds notice. Keep in mind that one batch of this is what you will need to mix with 1 lb of your meat choice. Yes, it sounds a bit much, but, it is absolutely necessary.
