Fresh Basil Pesto

You can always increase / decrease the amounts for a portion suited to your needs.

Ingredients

  • 1 cup packed fresh basil leaves
  • 1 cloves garlic
  • 1/8 cup pine nuts
  • 1/4 cup extra-virgin olive oil
  • 1/8 tsp Kosher salt
  • 1/8 tsp freshly ground black pepper
  • 1/4 cup freshly grated Parmesan cheese (substitue Pecorino if you would like)

Method

Step 1

Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add 1/8 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper.

Additional Tips

If using immediately, add all the remaining oil and pulse until smooth combining the pesto with the cheese.

If freezing, transfer to an air-tight container and drizzle remaining oil over the top. Freeze for up to 3 months. Thaw and stir in cheese.
