Buffalo-Style Chicken Salad

Ingredients
- 1 medium boneless, skinless chicken breast
- 4 and 1/2 cup salad greens
- 2 stalks celery, finely chop one stalk and halve the other, both vertically and horizontally (reserve this one for garnish)
- 1/2 vine-ripened tomato, finely diced
- 2 tbsp purple onion, finely chopped
- 1 c Snyder's of Hanover Hot Buffalo Wing Pretzel Pieces
- 2 tbsp Frank's Hot Sauce
- 1/2 cup Ken's Bleu Cheese Dressing
- 2 tbsp bleu cheese crumbles
Method
Step 1
Preheat oven to 375 degrees.
Step 2
Remove fat from chicken and cut chicken breast into strips or chunks, going against the "grain," place in a bowl.
Step 3
Add the Frank's to the chicken; stir and let sit for 10-15 minutes.
Step 4
While chicken strips are marinating, measure 1 c Snyder's of Hanover Hot Buffalo Wing Pretzel Pieces and add to food processor. Using "ice crush" option, pulse until finely processed.
Step 5
Dredge marinated chicken in pretzel crumbs.
Step 6
Place chicken strips/chunks on lined baking sheet (easy clean-up) and bake for 15-20 minutes (depending on thickness).
Step 7
While chicken is baking, toss the salad greens, 1 celery stalk (reserve one celery stalk for garnish), tomato and red onion together.
Step 8
In a separate bowl, combine bleu cheese dressing and bleu cheese crumbles.
Step 9
Once chicken is finished baking, portion out salad mixture on to two plates. Top with chicken breast and bleu cheese dressing mixture.
Step 10

This is a satisfyingly spicy salad and I promise you will enjoy it, if you promise to use bleu cheese dressing! Ranch Dressing is a simply unacceptable accompaniment to Buffalo chicken.
These ingredients can also be placed in a wrap or pita when you’re on the go!
Whenever possible, we use organic ingredients and free-range chicken.
Tip: My wife and I are big advocates of “cleaning on the fly” while we cook. Basically, this means that while we have some lag time during preparation of the dish, one of us does the dishes we are done using. It makes for a more enjoyable meal because clean-up is so much easier at the end; there is barely anything left to do! We cook together, so of course, it is easier for one person to kind of be the clean-up crew during cook time, but because we take turns actually playing chef, no one gets stuck doing dishes every time. It is a win-win situation!
