Crispy Panko Potato Meatballs

Ingredients
- 1 lb ground beef
- 1/2 c shredded mozzarella
- 1 egg
- 1/4 c bread crumbs (plain or italian seasoned)
- 1 tbsp italian seasoning
- 6 large yukon gold potatoes (peeled)
- 1/2 c shredded parmigiano reggiano cheese
- splash of milk
- 1 tbsp garlic powder
- 1 tsp salt
- 1 tbsp parsley
- 1 package panko style breadcrumbs
Method
Step 1
Preheat oven to 350 degrees
Step 2
Add water to large pot and start bringing to boil
Step 3
Place panko style breadcrumbs in a small bowl and set aside for later
Step 4
Combine ground beef, mozzarella cheese, egg, breadcrumbs (not the panko style), and italian seasonings
Step 5
Form small meatballs (or as Justin would call them, meat marbles) about 1 inch in diameter
Step 6
Place on cookie sheet and bake at 350 degrees for 10 minutes and remove from oven
Step 7
Add potatoes to water and boil until cooked through
Step 8
Mash cooked potatoes, shredded parmigiano reggiano cheese, milk, garlic powder, salt and parsely until smooth (consistency will be thick, almost like raw bread dough)
Step 9
Using a small amount of the mashed potato mixture, form a small ball about 1 inch in diameter and flatten in a patty about 3 inches in diameter
Step 10
Wrap a single potato patty around a single meatball
Step 11
Roll the potato/meat ball in panko style breadcrumbs until well coated and place on cookie sheet (feel free to reuse the cookie sheet you cooked the meatballs on)
Step 12
Repeat the above 3 steps until there are no more meatballs left
Step 13
Place the panko potato meatballs in 350 degree oven until golden-brown (about 20 minutes) (alternatively, you can fry the panko potato meatballs until golden-brown)
Step 14
Add your favorite sauce and enjoy!

A unique and AMAZING spin on meatballs! Great as an appetizer or even as your main dish. Could not get enough of them! 2 thumbs up
