Greek Chicken

Ingredients
- 1/2 Cup Extra Virgin Olive Oil (substitute with avocado oil for cooking at higher temperatures)
- 2 lemons juiced
- 1 tablespoon chopped fresh or dried oregano
- 4 cloves minced garlic
- 2-4 boneless skinless chicken breasts
Method
Step 1
Mix oil, lemon juice, oregano, and garlic
Step 2
Put chicken in a large plastic Zip-lock bag or Tupperware container and cover with marinade. Let chicken sit for at least 12 hours in the marinade for best results.
Step 3
Pre-heat oven to 350 and a grill pan over medium heat.
We prefer to use the George Foreman Grill for this to save time and have less to clean with a even cooking and dripping off any fats
Step 4
Cook chicken till well browned on both sides. (About 8-10 minutes on each side. Could be more or less depending on thickness of breast)
If you are using the Foreman Grill method, just cook till browned and cooked through, if not, continue to the next step
Step 5
Transfer chicken to a sheet pan to finish cooking in the oven. Cook chicken till it is cooked through, about 25 to 30 minutes. Let the chicken rest 10 minutes before serving.
This goes great with a side of Greek style rice, Greek potatoes, steamed vegetables, or on top of a salad. Let us know how you served it.
