Healthy Loaded Sweet Potato

Ingredients
- 4 Medium Sized Sweet Potatoes
- 1/2 cup Low Fat Sour Cream
- 1 tsp taco seasoning
- 1 tsp coconut oil
- 1 red bell pepper, diced
- 1/2 yellow onion, diced
- 2 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp salt
- 1 can low sodium black beans
- 1/2 cup mild or spicy salsa
- 1/2 cup reduced fat Mexican cheese
- 1/4 cup chopped green onion
Method
Step 1
Poke holes in the potato with a fork, and cook if the microwave for about 8-10 minutes, or until soft) on high for 4 potatoes, or bake in your oven for about 45 minutes at 400°F.
Step 2
Combine sour cream and taco seasoning in a small bowl and mix
Step 3
Heat oil in a pan over medium heat. Add peppers, onions, chili powder, paprika, cumin and salt. Cook until the onions have caramelized slightly, about 5 minutes. Add black beans, stir to combine and heat through (about another 5 minutes).
Step 4
Slice the potato lengthwise down the middle, use a fork to fluff the inside of each potato. Top with 2 tbsp shredded cheese, 1/4 of the black bean mixture, 2 tbsp sour cream mixture and 2 tbsp salsa of salsa. Garnish with green onion.
