Yankee Grits

Ingredients
- 3/4 c instant grits
- 3 c water
- 1 and 1/2 c mild cheddar cheese, shredded
- 1/2 tsp salt
- 1/4 tsp black pepper
Method
Step 1
In medium sauce pan, bring water to a rapid boil.
Step 2
Add grits, stirring slowly.
Step 3
Reduce heat to medium-low.
Step 4
Cook for 5 to 7 minutes, or until desired consistency. Stir occasionally.
Step 5
While grits are cooking, shred cheddar cheese.
Step 6
After grits have reached desired consistency, turn off heat, but keep sauce pan on burner. Add Cheese, salt and pepper.
Step 7

I’m from the northeast and I never tried grits until I visited my husband’s hometown of Jackson, Mississippi. The grits his mom (also originally from the northeast) introduced me to were cheese grits at Mimi’s Family and Friends, in a quaint part of town called Fondren. These are my rendition of those grits (yes, I cheated and used instant, but like I said, I’m from “up north”). To be quite honest this is the only way I will eat grits; they are delish and my husband loves ’em too. Not bad for a Yankee.
